The buffalo mozzarella from Campania is often defined as the "queen of Mediterranean cuisine", but also "white gold" in deference to the high quality food and taste qualities of the dairy product. It obtained the denomination of controlled origin (DOC) in 1993 and the protected denomination of origin (DOP) in 1996. The term "mozzarella" derives from the name of the mozzatura performed to separate the dough into single pieces.
